All Doors. Regrettably. For example, the Fishing is a 3-parter, so you need to complete all three. Same goes for the arena, quiz, gambling, etc.
Ugh. Is it really worth it? The fishing mingame is awful, and the time limit on the quiz is a little ridiculous.
As for the fishing, there's definitely an RNG element involved, which is frustrating. Still, at least you only need to do it the once. If you want to open Door 14 again on subsequent playthroughs, you'll need to redo it on NG+, but it's basically optional outside of the runs you go for Star Door 14 in.
MindfulOcean did you do star door 15, in The Abyss.
I'd like to confirm that to unlock the door, you really do only need the first level of every Sun Door cleared. I know because I just opened the door after clearing only one level of the fishing and quiz games. You can also complete the first minigame (the game with Josette) on Easy and it will count.
So in summary for anyone else who pops in, to open Star Door 14:
1. Complete all the Moon Doors (the first one has a second part after you get Agate).
2. Complete all the other Star Doors (including #15, which is at the bottom of the Abyss).
3. Complete the first level of every Sun Door (this is sufficient for the achievement too).
Shame the Blackjack is still mandatory; the poker is infinitely easier.

No it's not. The Poker requires you to know many complex rules that are way too complicated to be expected to learn just complete a minigame. For that reason, they should have completely deleted that awful poker stuff from the game.
In contrast, Blackjack is very simple to learn and to win at, and therefore much better than Poker.
