I have only played through once so far, but can't you just load a chapter previous to the one that has multiples, and load from there and make a different choice? I will need to try this now....

You just have to play the chapter before the paths become multiple. Like start from Chapter 5 if you have to obtain the other Chapter 6 path.

You can use an achievement guide to know exactly how to unlock the other chapters.
