Boss really frusturating to catch
I get that they're BOSSES and shouldn't be easy to catch but it's ridiculous that I can spend so long trying to get the boss to a fraction of an hp, and hit it with all my debuffing moves just to debuff it by ten, and then try to catch it with boosting gear and good luck and STILL FAIL. It's also INSANELY annoying to try and go back and catch older enemies for upgrades to weapons and questions and to not be able to capture them because they die in one hit and you can't capture them at full when they're under your level. Two very frusturating things that made me have to put down the game for a while, after spending hours nearly capturing a boss just to have to reset because it killed itself with a status condition or something. Is there any way or at least any plans of making this less frusturating?

First of all, AFAIK you don't really need to lower their HP past maybe 25%. It may provide SOME benefit, but not enough to justify the risk. Once they're that low, focus on stacking debuffs and status-ailments.

Of course, near the beginning of the game, which is where I am, there are not many debuffs. But otherwise good advice, so thanks!

What I remember from fighting Snowflake was that I had the boss Tired, Cursed, and Weakened for essentially the entire match, so I got his health low and all his stats low. After that I know I applied Bad Luck and then I probably had some items to boost capture rate equipped.

One way to capture bosses if they do too much damage is just kill them on Epic for the achievement, exit the game without saving and load back in, then fight it on a lower difficulty. You'll keep the medal but you'll have a much easier time capturing the boss.

Another tip is that every capturable boss in the game either respawns or appears in one of the boss rushes, and the latter still counts for the individual achievements in addition to the boss rush achievements themselves.
What if i killed a Boss like the 1 eyed one at the beginning. It doesn't respawn and i didn't have good debuffs.

To summarize :
Reduce the enemy’s HP to 10%, using the putrid worm, the spell Fireworks (both good luck for you and bad for the foe to capture), Dark Clay to debuff the défense/magic defense, some negative status (curse, tired...), Viking Monolith of course, and equipment to increase the chance of capture (list in the link I gave)
It works very well on my side, I even managed to capture the final boss with his tips.
I haven't read the wiki to avoid game spoilers, but I don't see some important stuff mentioned here.

1) Anna's Bow Whack attack is the most important factor in capturing. It will NEVER kill your target, it always leaves them alive at 1 HP.
Bow Whack also makes enemies Surrender a LOT. Surrendered enemy will always get successfully captured, no matter what.

2) Thanks to (1), going back to early game areas after you meet Anna is the easiest method to capturing. One Bow Whack from Anna, another character does the capture, go next.

3) Putrid Worm is mentioned multiple times, but nobody mentions any details.
- It's the green caterpillar enemy
- Found in the very first biome (before you meet Natalie)
- Use Matt's Steal attack (if normal would kill it) to capture safely
After Capture, you can Summon it in combat. Very low SP cost, deals minimal damage, gives the enemy a big Dodge debuff. Game said debuffing Dodge is good for capturing.

4) Use the captured Summons to apply various debuffs early game. I think I used the Tired status from some rock-like Summon to capture Jotun for example.

5) In the Iron Fortress, there's a guy in prison. Talk to him and he moves next to Matt's house and gives a quest. I don't remember where I got the items for it, but the rewards are:
- Lock On spell (Good Luck buff + Accuracy buff)
- Eagle Eye, a high accuracy bow that has a chance to inflict Bad Luck on hit.
Upgrade it and give it to Anna. It gives her good damage, it has no element and therefore you don't ever need to switch it out, and your Bow Whack now applies Bad Luck too.

6) If an enemy is already 1 HP and even your weak worm Summon would kill it, check if the enemy has 150% or more resistance to a certain element. If they do, you can use attacks that deal 100% as that element to heal them.

7) For stronger enemies, scan them and then Flee the battle. You can check their statuses in the Bestiary.

I've already captured some Dragons and Bosses too (Poseidon).
Specifically, it's Matt or Natalie who's doing the capturing and Anna does the Bow Whack. First I damage the boss down to about 20% HP, near the end I use Natalie and Anna's holy attacks to stack Weaken, then I add Dodge debuff from the worm, Anna's Bow Whack to reduce the boss down to 1 HP + apply Bad Luck.
