unequip gear that trigger auto skills/retaliations when going for a cap
depending on the monster; you may want to bring dispel (for example; jotun enrages and gets a bunch of buffs when near dead)
debuffing evade is more useful than other debuffs (or it seems that way; going off one of the library books), so the worm summon that gives -80 is stupidly good for capping
if they're immediately rebuffing then you're messing up turn order, have your first or second action in a turn be the dispel (and ideally the other being the worm summon) and the third (last character) do the capture
Capturing bosses is hard, I agree. I find there are a couple of summons that can make it much easier. For example the Red Flybot can invert an enemies stats, and this works great to turn a boss's buffs against it. The NoLegs doll is also nice because it gives Bad Luck and debuffs evade. If the boss is immune to bad luck or already has it, the Putrid Worm summon provides a massive evasion debuff. Just don't wait until a boss is low health to start putting status effects on it. When a boss hits about 1/4 health you should begin trying to inflict statuses that gradually lower stats (Curse, Weaken, Tired), and as was mentioned above the right gear will help as does having Good Luck. After awhile you'll start to get better at capturing enemies.
One last thing to keep in mind, because of the weather effect you will need a summon to change the weather if you want to catch Laurelin. In my opinion Laurelin is the hardest to catch and honestly just feels like a stronger Panda Bear summon.
For this reason, Curse is a VERY useful ailment to throw on there, since it'll gradually weaken both Defense and Magic Defense - and surprisingly few bosses are immune to it. Also, Bad Luck will directly affect the enemy's odds of breaking out of a box, so that's terribly handy too. Finally, if the boss doesn't have 100% resistance to Stun or Freeze, throw that on there - they HUGELY boost the catch-odds, and there are Summons that can inflict them with very high odds. Most notably the Mouse Slime, which is cheap, deals very low damage and has a 200% chance of Stunning... enabling it to overcome anything short of an outright immunity with complete confidence.
And, yes, make sure you have a designated 'monster catcher' outfitted with three pieces of upgraded gear that boosts odds. I don't know what all three pieces are for male characters, but for female it would be the Curly Horns (found in Greenwood Village) and Ranger Skirt (Anna's default). And, of course, the Mini-Drone Flair.
So that's really it. DON'T try to bring them down to a sliver of health, that's far too risky - just stack whatever other capture-boosting effects you can, based on the particular boss' immunities, once you have them reasonably low...
EDIT: I just went up against Laurelin and captured him on my first try using this approach - WITHOUT even changing the weather from Breezy. Just got him down to about 20% HP, then stacked some major Agility and Magic Defense buffs on him, courtesy of a couple of summons. (Putrid Worm and Earth Dragon.) At that point, Anna - equipped with the aforementioned full set of capture-boosting gear - was able to catch him no problem, despite not being able to hit him with any ailments.
One way to capture bosses if they do too much damage is just kill them on Epic for the achievement, exit the game without saving and load back in, then fight it on a lower difficulty. You'll keep the medal but you'll have a much easier time capturing the boss.

Also, don't forget that the number of times the container 'shakes' is an indicator of how close the roll was. If you catch it after three shakes, you juuuuuust barely made it, and if it ESCAPES after three shakes, you only need to tip the scales a little bit further to pull it off... should help give you an idea of how close you're cutting it.
