As for why they'll join what you see as a random war, free presitge! They also weaken you as a future threat and help keep a possible future sphereling of their's stronger than if they didn't join.
Though the AI is just pretty randomly acting I guess. If they weren't, game would pretty much play out the same everytime give or take this or that. Try what richy said but I also had interventions of relatively friendly nations out of nowhere. Happens though I guess he's right that it makes it less likely.
GPs can only interveen when they have a friendly opinion (or better as in sphered) of a nation on the losing side of a war with no wargoals other than status quo. So in general, just don't attack nations that are firendly or sphered by GPs, simple.
About the territory, yeah I forgot about the thing with status quo and intervention.
