Pinch the coins with your attack once to "grab them" and then drag them into the chest inside the boat wreckage. ( It's a pretty big chest )
Then crawl up into the chest and drop the coins in it.
You need 10 coins to unlock the Mantis Shrimp.
On a side note, the pirate crab is pretty fun to play too. When you get to 10 coins the crab gets a sword weapon that replaces his normal attack, which makes him more mobile in fights and does a bit more damage.
I also noticed as both the pirate crab, and the mantis, you can go past level 10. So if you ever wanted to be a GIANT CRAB, then the pirate's the way to go!
Unless they also updated the level cap on the King Crab and regular crab. I've yet to test this out.
