Also, if you set the difficulty setting for a player empire to easy, they get x1.5 economic and a x1.5 research advantage.
And yeah, play on easy. If you can't comfortably stomp the galaxy on easy with all techs, it'll never be easy enough for you.
Ok, How do i mod the tech? There's not tutorials online. If you tell me, ill mark it as an answer

I din't find anything on the SOTS wiki about instantly researching tech. I only found how to make sure that you have the ability to research everything. What i need is instant research.
At a certain point you'll have to start trying to look at the files and mod things yourself. You're trying to play the game in a way that isn't intended, and as far as I'm aware no one has made a mod that does what you're looking for.
If you follow the instructions in the wiki it'll point you towards the files to modify. If you look there you should see examples of tech prereqs, chances, and costs, which you can modify.
But then again, if you are not carefull you can still loose if you run with low numbers of planets.
if you need even more help than that i could suggest using teams and have 2-3 AI on your team. and if you want a realy bonkers game you can donate all your money to the AI.
