Also Jeffs Spiderware games although the adventures are designed for 4 you can play a single character as well.
Also Wizardry 8 is designed for 6 but you can play with 1 as well not designed that way but you would level up faster.
Also Grimoire : Heralds of the Winged Exemplar just went to Version 3 and is now available on Gog but I prefer steam myself you can play with 1 I think as well but its designed for 6 or 8 character.
I also plan to pick up Knights of Chalice that game seems like its going to be fun but first I'd like to play the Quest for awhile going to get it soon.
One game I did play was Lords of Xulima that is a 6 player party game but it is an amazing game worth playing. If you like Rogue games you may wish to try Tales of Maj'Eyal it is a very deep game with single player character customization you'd probably like it.
If you like 4x fantasy strategy games plenty to try Legendary Heroes Fallen Enchantress you start off with your leader a single hero and can get more its a great game, Deity Empires is a game very much like Masters of Magic with deep character customization and unlimited levels for your units and heroes worth checking out. I am not a fan of their forum community though wrote a review why but its a good game.
Other favorites Battle Brothers,Age of Wonders 3, Warlock 3, Eador Masters of the Broken World, Legend of Grimrock Series...
For the King I never played it but bought it u start off with a single character and fight monsters u may like that one its a little like this game.
Another big favorite I love is Zombasite this one is really good you have a single character with deep customization and classes and it plays like Diablo but you must face other clans doing what your doing and they may raid your town lifestone. Enemy clans level up find gear recruit more people and ultimately try to invade your town. Its better then Diablo because while your hunting your town could come under attack by monsters and enemy clans a very unique game and worth picking up as it adds stress to you as a player trying to adventure and hunt like u normally do in Diablo but under pressure of protecting your town from getting destroyed and losing to monsters boss monsters invasions and clan attacks to destroy you.
Also check out the Gothic 1-3 Series it is a Single player game like this game with deep character design etc and plays a bit like Skyrim but it also plays like The Quest a lot as well.
During the Oct Sale I also started playing Blackguards 1 & 2 its cheap to pick up during the Winter sale its a good game as you hunt you can spend experience on your upgrades of skills its different then other rpg types of games where you cannot spend experience but wait until you level up then u can spend points.
The couple of other games I can think of that almost fit:
Ruzar - The Life Stone
The Keep
Are both real-time, and are mostly like Grimrock... puzzle games with gear and spells (no NPC's, merchants, quests, etc.) They are 1 character and 1st person though. There's also the very old and clunky, but still kinda cool Anvil of Dawn, which you can get on GoG.
If you can live without the 1st person, I enjoyed these quite a bit:

Those games play a lot like The Quest (you move, they move), they are just not 1st person. There're probably several more non-1st person games that I'm not thinking of.
If you have an Android device, there are at least 2-3 games that are 1st person, 1 character and turn-based. They are older games that I played several years ago and can't recall the titles at the moment. You should be able to find them in the Play Store.
Edit: One of the Android games is QuestLord. It is turn-based, 1st person and 1 character. My memory failed me on the other two. They were Deadly Dungeons and Dungeon Legends, but they are both real-time.

There is a lot of solo grid-based dungeon-crawlers with real-time combat like Anvil of Dawn, Ruzar, The Keep or Vaporum series.
There is a lot of solo first-person RPGs like Arx Fatalis, Deus Ex series (combined with FPS since it's immersive sim), King's Field series, Elder Scrolls series or Ultima Underworld series.
You can also play other grid-based dungeon-crawlers with turn-based combat with one character only despite the fact that they are designed as party-based. For instance the whole Dungeon Master series (the first one, Chaos Strikes Back, Dungeon Master 2 or Theron's Quest) is winnable solo. Others played this way other classics like Eye of the Beholder.

If you would like a more modern game that is almost identical to The Quest, I would highly recommend Might and Magic X: Legacy
I have recently been playing party-based RPGs, but playing them on lower difficulty with a solo character. Unfortunately, none of them have been first-person yet. I have completed Pillars of Eternity 1, Divinity: Original Sin 2, Icewind Dale 1, and am close to completing Baldurs Gate 1 with a solo character. I petered out on Pillars of Eternity 2 because of the boring pirate stuff, but it seems doable also.
I'll try a few first-person, turn-based games to see if they can be soloed, and let you know if I find any.
If thats your thing then go with Vaporum.
Its a single party member first person dungeon crawl, and has the option for real time or turn based combat.
This may be exactly what you are looking for.
