I used Unscrew on a boss....

First off, Unscrew only has a 30% chance of insta-killing the enemy. Second, Bosses are usually immune to insta-kills, in most games you'll ever play.

What exactly is the issue here...?

No, I find it funny that I Unscrewed Browboy after dying to Bubba, and he stayed there instead of exploding, like he wanted to say one more thing before he died. *Gasp* BROWYBOY THE UNDYING! sorry i'll go

fun fact bosses in this game can be insta killed..... its just stupidly unlikely however chances go up if you use the reaper bytes for instance chipper has a 1% chance of being killed instantly by any attack that would instantly end him..... and people have hit that 1 percent with the reapers atleast

Can confirm insta kills work on bosses, I've killed Bubba with Esc Key and Scott with Unscrew before. Not exactly a 1% chance, but it's most likely around there. If I remember correctly, the chance goes up as the battle drags on. So you have a higher chance with a boss that has low health than more health.
