Demo and ultrawide.
When I launched the game the main menu shows an entire region completely filling the monitor horizontally, however, when you go into the demo, you can zoom in as much as you want to fill the screen, but if you start zooming out it's all black on the sides. Is that because the play area is limited in the demo or is the black just covered by fog of war?

Tutorial missions, which is the demo i believe, are indeed limited in size
I think the scenario you played had a limited map size. As you progress the scenarios the maps will get bigger and in the full version the freeplay(Which is the main game mode of the game) scenario has a max size so big that you will never explore all of it.

Level 1 of the demo is a tiny map (64x64), and a short play. At full zoom-out it is about the size of a hand on 1440p. Not much to see on 1080p, let alone ultrawide. Level 2 is slightly larger (128x128). At full zoom-out the width almost fills a 1080p screen. Almost. Again, not much for an ultrawide to show. Level 3 and 4 use the same map which is slightly larger than level 2 (192x192). Still, some black on the sides.
Level 5 is more than large enough to fill the screen, once explored (2048x1024).
For a rough gauge on ultrawide you probably get about 200 tiles at x1080, 268 tiles at x1440 and 400 tiles at x2160.

If your 'ultrawide' is really a double-wide then up those numbers by about 50%.

My monitor is 3440 x 1440 and called "ultra wide" (personally I just find it wide). The reason I bought this monitor was Factorio:

I had at that time a Odyssey OLED 5120 x 1440 and this was really *ultra* wide. Walking south in Factorio was a sucide mission and not entirely bug free*

The existence of 5120x1440, which some would call ultra wide compared to the "standard" of ultrawide, was the reason for the tacked on clarification. I use the 5120x1440 for Factorio, and most "main" projects. Like you, the monitor was a 'because of Factorio' choice. So far, however, moving south has been reasonably safe. I do watch, however, for the bugs. Especially the ones hiding in the trees. East/West, however, can be a challenge. Bugs will surface on the screen before they register on the minimap. Surprises can be shocking.
