Downgrading the game?
My entire save with all the mods is broken after 1.1. I can't downgrade or go back to that version through the Steam menu. Is it possible or is it too late.

You can definitely go back to 1.1.110, pretty easily too and through steam.
Right click the game in your steam library and open the properties.
If you own the DLC, go to the DLC tab and uncheck it (since it didn't exist before 2.0 you can't really go back without disabling it).
Go to the betas tab and select 1.1.110 in the drop-down.
Wait for steam to download the version of the game and you will be good to go.

Do note that saves made (or overwritten) in 2.0 won't load in 1.1.110 for obvious reasons.
If you want to continue your old 1.1.110 saves and be able to play new games and use the DLC if you purchased it, you can also run a dual-Factorio setup. You can run one version on Steam and the other version as a stand-alone without Steam connection. Which version to run where is a personal choice based on goals and neither option is "better" than the other.

Running the 2.0 and DLC on Steam with 1.1.110 as the stand-alone will have all your achievements in 2.0 show up on Steam (if you're using Vanilla anyway) and those in 1.1.110 will not. Screenshots in 1.1.110 cannot be shared on Steam as screenshot. You can still share them as Artwork, like any other image. The Steam sync, and cloud storage will not be available for 1.1.110 and it will not show in your hours played. You won't be able to use Steam to invite others to multi-player and you won't have the Steam overlay.

If you run the 1.1.110 on Steam as a beta, then all the things above are reversed. All the Steam features and benefits will be available in 1.1.110 and none of them in 2.0/DLC.

If you're interested in doing a dual-Factorio setup it's rather well discussed in this thread, https://steamcommunity.com/app/427520/discussions/0/4512129134839231983/
I got it thanks, I have about 1000 hours on my save since factorio left early access and half the mods have not been updated to 2.0. Which kind of sucks since after 300-400 hours I exclusively started playing with mods only.

Give them time to update the mod. It's not a small task with all the changes, esp. bigger overhauls, which might want to inherit some new concepts/possibilities

Not all mods will get updated, that's how it goes with modding, the authors are doing it in their free time so it's not unusual for at least a portion of the mods to not update as their authors moved on to do other things (playing other games or just not feeling like modding anymore).
