Like the poster above, I usually include a single assembler on my platforms that can unbarel water that I send up from the surface to accelerate startup (an yeah, jeet the empty barels over the side, which is somewhat cathartic to do).
Haven't thought about stockpiling actual asteroids, but sure that seems like something that could be fun to try too. Only issue I can see is that for nuclear (if/when you decide to use it), you need to get that initial kick of power, and you'd need a lot more non-nuclear power (read: solar panels, which take up more space) to get asteroid processing online for it, vs. simply pumping a ready-made water delivery straight into the steam generators.
