One thing that helps is that you can apparently manually load ammo into the turrets through the remote view, so you don't also need to be sending solar panels and inserters right away.
I then expanded to two turrets at each corner, with arms loading them, periodically launching ammo stacks while I worked on getting ammo production in orbit.
It's by far perfect ratios, but I have found 2 asteroid catchers/crushers set to just the iron asteroids, each feeding into 2 electric smelters each feeding into a factory seem to produce more than enough ammo to keep up with the passive asteroids floating around.
Going to start scaling it up soon for the voyage back, hopefully without getting destroyed this time.
You don't have any saves from before you left Nauvis? (I recommend making explicit saves with some regularity, but also allowing more auto-saves as well)
Two would have been enough, in retrospect, but I got panels / turrets / inserters / rare ammo / cargo pods / collectors / etc all up in the first 30 seconds.
If you travel up to the space station, and then let it die, you will respawn back at Nauvis.
If you dont have the tech to actually rebuild, or if you just dont want to do that, like if its your first playthrough (like me)
You just need to prepare 2 rockets to get back to nauvis.
Launch space station, travel up there, send back excess space platforms, die, respawn at Nauvis.
Its not actually a death spiral in the character death sense.
Easiest thing to do is build it above Nauvis remotely if possible of course, but sometimes need drives innovation.
By the way, the game autosaves whenever you send a platform to a planet for the first time.
