I think that still requires mods, but you can definitely set up an alarm that notifies you when ore patches run out and that is rather simple.

You can read belt contents. So you can wire a belt that carries the ore and check if it has some ore on it or not.

There's a mod that does this. It's one of the few I'd consider "must have".

I'm thinking it's "AutoDeconstruct" (it's possible there's a space in there)
