Back to question, for first three planets, gun turrets with enough damage upgrade and locally craftable magazines are fine, or directly import higher ammos. Just add more turrets.
For further planets use rockets. Do not use electric or laser weapons. Always have repair packs and replacements parts in platform hub.
My first interplanetary trip, after a test flight to see what things were like, I used two rows of turrets at the front. I'm not sure if it was actually needed at the time, and I never needed to do that later on.
But then, I was keeping up with the physical damage researches, and was playing (IMO) fairly slowly.
Keep it simple, as basic yellow ammo works fine, no need for the advance stuff. Just do some of the damage and speed upgrades.
Only use ammo you can produce on the ship, never import ammo for regular use on solar trips.
Current ship runs at top speed of 40Km/S and clears every thing in the way easily to all 3 planets. From there on I dont know. But if need I can slow it down a little and likely be fine.
Nobody has any ratio to tell you how much them you need, just experiment and find out yourself.
I went a little more complex, my engine pumps have a duty cycle, only operate when not in orbit and below a set speed. Finally there's an override I use to prime the engines / push the platform out of orbit.
Don't bother with uranium ammo. Just make basic ammo locally on the platform. Just have a bunch of turrets. Note that turrets can take ammo from each other with inserters, so you can pack in a lot of turrets up front with just 1 space in between them, as long as the one at the back of the chain is able to feed in more ammo from a belt. Research the repeatable that improves your turret damage. With a lot of concentrated fire doing the inserter trick to pack in more turrets in less space, you can easily take down the small and medium asteroids you'll encounter among the inner planets, even with the weakest ammo.
I also noticed that when I turn on the ship it tends to go at full speed.
I have to look into limiting the starting power.
You should put a wire from the Hub to two Pumps between your thrusters and the fuel production. The speed of the ship can be read and the pumps set up to only allow fuel to flow if the speed is below YX. With that your ship fluctuates arround the set target speed.
