Is there a way to change what planet you're working on in the map editor?
It seems like there's no easy way to do this. Even with the planet tech researched it still doesn't list the planets as possible destinations on the map screen.

planets and platforms are surfaces, so you have to open the "surfaces" panel and select the one you want in the "current surface" dropdown

That is crazy-unintuitive and poorly labeled (it really should say "planets and platforms"). I only see Nauvis as an option though.

Because surfaces existed long before DLC/Space Age was even a thought, and are used for other things as well (tutorials in the tips/tricks, used by mods like factorissimo...). Surface is now an established technical term in factorio, and it's too late to change it without causing more issues

There is an option below in the same panel to generate a new surface based on planet's settings, but I don't know if it will actually generate a planet that the game will recognize. Perhaps the only way to do this is to actually visiting a planet.
It only populates the list with built stations/ships and visited planets.

Not merely visited. You have to have dropped at least a cargo pod. I made a couple trips to and from Vulcanus to test my very first mobile space platform. Vulcanus didn't appear in my list until my first drop.
weird i never been to gleba but it shows in list. Havent looked at map though.. and game closed atm as headed to bed so cant check. BUT it does show in my list
