There's a factory to do fish breeding.

You've always been able to automate fishing on Nauvis by using a long inserter over the water and a chest on the other end. When a fish swims by the inserter will grab it.

Grabbing the fish in the base game was a limited thing since fishes were a finite resource.
Space age adds a way to "(re)produce" fish, turning it into a proper resource you can automate.

You put space science into the rocket (instead of a satellite for example) and it will give you an equivalent amount of fish back (up to 100 which is a full stack of fish, any more than that is wasted).

Not sure if it works for space age but that's how it works.

Pretty sure a patch note said that you don't get fish back from putting space science into the rocket, at least not in SA

There is indeed a line about this in the patch notes of 2.0.7, with the icon specific for space age so it should not affect the base game.
