what happened to quick bars?

Nothing, AFAIK.

If you mean the changes, it happened back in 0.7.
It's no longer extra inventory slots but you have access to a large number of bars to swap whenever you want/need.

i play with xbox one controller and keyboard but havnt been able to play very good because something is terribly different with controlls, is there a way i can revert back a year controls only?

You can download ancient builds going back to 0.12 using Steam betas and to 0.6 using the Factorio website[www.factorio.com].

You may need to change steam settings to use a controller so that steam is in charge instead of the game, built in controller support is new. I believe it's big picture mode - settings - controller or something like that anyways. Might need to do the opposite as well, disable steams control of the controller and enable controller support in the game settings, might just have to play around with it
