Pretty much this. To expand:
Pumpjacks produce crude oil. Depending on how close/far they are from your productio center, you either barrel them up and ship them or pipe them into a storage tank.
If you barrel them you need to decant them, but the end result is the same either way - you pump the crude into a refinery.
The refinery has 3 output pipes (Turn on the detail view with ALT), each one produces a different product. Storage tanks, again, optional.
Each product goes into a different chemical plant to create something useful. Any leftovers (say, heavy oil that doesn't become lubricant) you can crack into gas which you can turn into solid fuel to replace coal as a better source of power for anything solid-fuel-powered.
Oil is really simple, it's just really space-consuming because refineries and chemical plants and pipes take up a lot of space so you'll want to create a separate enclosure for them with the relevant support systems.
After refining, you will need three clusters of storage tanks for the three primary resources that come from oil processing: Heavy Oil, Light Oil and Petroleum Gas. This will give you a large buffer of each type to supply your needs.
I'm at that point where I split my crude oil into 3 parts.
What happens if I don't store all the byproducts.
Are they wasted or do the pump stop until I create some space for it?
The pumps don't stop, the refinery does - which is why the suggestion is always to have a storage tank for the crude so even if your refinery hiccups, you don't lose production time. Think of it like an assembler you don't clear the product from - only here you have 3 products.
The pumps will stop if there's no room for any particular type of oil product. This generally is a problem for newcomers (And I haven't even fully mastered the craft) especially since some products, like Methane and heavy oil are more useful than light oil. Usually to combat overflow of a particular oil product I put it to use as solid fuel to power everything, since it's technically an infite source of fuel and coal becomes important as a crafting ingredient later.
If you cannot either store or use the products of your refinaries, they stop. The most frequent problem encounered is that you need a lot of petroleum gas but not much heavy and light oil.
The solution to this is to get Advanced Oil Processing tech so you can crack heavy into light and light into gas. But this tech requires blue science to research, And to make blue science you need batteries and plastic which require basic oil processing to be already up and running.......
So the best approach is to go straight into blue science production once you have batteries and plastic up so you can immediately research Advanced Oil Processing so you can crack heavy and light oil to gas and therefore make much. much more batteries and plastic (whioch are vital) and most importantly your heavy and light oil will get used up too meaning production won't grind to a halt all the time.
However knowing this is what you need to do is one thing and actually doing it is quite another. Blue science is notoriously difficult to figure out, and working out how to pipe the various fluids around an advanced oil processing area without creating a hopeless mess of spaghetti that ends up mixing it all into one unusable gloop is another mind ♥♥♥♥.
For this reason the first time you go through the basic oil - blue science - advanced oil development you need to take it one step at a time and don't expect to get it right first time. Also take steps to give yourself breathing room so you can think stuff through - to which end I would recommend:
* expect to take some time getting to grips with it but also expect the biters to take a much dimmer view of you activities as soon as oil comes on line, so set up some additional defences, such as more and beffed up turret nests before you start.
* Make sure to allocate a *lot* of space for your oil processing as this will help you keep things organized.
* Start by building a sizable and expandable storage buffer tanks for heavy and light oil when you build your first basic oil plant. People like Katherine of Sky are so good at this they don't need to to, but you will becasue it will take you much longer to get your head around all this.
* Do not try to make a self-contained blue science area. Make separate global production areas for batteries, plastic, red circuits and filter inserters. Then just belt a feed for all four of these ingredients to make your blue science packs.
The approach I would recommend is:
1. Make sure you have a big supply of green circuits going into the main bus. You would be wise to upgrade before you start oil. You will need them and you can never have enough green circuits anyway.
2. Build a dedicated inseter production area, including the filter inseters you'll need for blue science packs. Also add a pipe and underground pipe production unit and store them in boxes. You will be needing a *lot* of pipes.
3. Prebuild a red circuit production line (make sure it's expandable). It won't work yet becasue you have no plastic, but it's another thing you can do now before the oil production gets the biters in a tizzy to give you more time.
4. Allocate an oil processing area, then double it, and set up turret nests to defend it.
5. Find at least 10 oil patches, pumpjack them and either pipe or train the oil to a couple of tanks in your refining area.
6. Set up basic oil refining, store heavy and light oil for now, and route the gas to set up sulphur, sulfuric acid, battery and plastic production. Put batteries and plastic on the main bus.
7. By following these steps you will now have batteries, plastic, red circuits and filter inseters ready to hand which makes making blue science packs a snap. Research Advanced Oil Production first and then attend to cracking your stocks of heavy and light oil to gas
If there's less petroleum gas than light oil, I crack light oil to petroleum.
If there's less light oil than heavy, I crack heavy oil to light oil.
I have one tank of each for the circuits to operate on, and then it self-manages and whatever kind of oil processing you use, you always have 2.5k of each oil to feed from. It's probably not THE most efficient way of doing it but it's nice and simple to set up and then you can just leave it while you worry about getting more crude oil into the system and using what you're producing.
