sandbox mode, How do I play as my character?
Am I able to disable the flying around camera and play as the character like in freeplay?

You need to use a console command to create a character:

/c game.player.create_character()

This will create a body and place you in it, with collisions when moving, health and equipment slots.

You might as well paste the wiki page with a ton of console commands then:

You're not supposed to put anything between the (), you have to keep it exactly to:

/c game.player.create_character()
