What are the differences between the demo and normal versions?

I think the demo is outdated.

For starters, you have access to the real meat of the game, which is a randomly generated, near-infinite map, where you can build a factory as large as your computer can handle while going up the tech tree and ultimately launching a rocket into space (more or less the "win" condition, but it's a sandbox so you can pretty much not care about that and do your thing).

You can also play with mods if that's your thing, there are achievements for those that like that as well.

Basically, the demo is the first half of the tutorial campaign, it's there to teach you the basics of the game (mining, smelting, processing, researching and fighting), but that's about it.
If you didn't enjoy making those assembly lines in the demo, then the game probably isn't for you, and if you liked it, the game is mostly based around that.

If you value your free time, then yes, this is one among the many games you would want to avoid, it very much has the "one more turn" problem.

It's not turn-based, but you end up with something like "I want to complete this assembly line before I stop, it won't take long." followed by "oh, the tech finished, let's see what this oil thing I unlocked is about", and several hours later you are still on there, figuring out how to automate your battery production.

Every major release/update I am back in for another 100+ hours. I sunk hundreds in it before I claimed it on Steam and I think I am over 600 hours on Steam now. If the demo at all "scratches that itch" for you this will be well worth the investment.
