They work very well alongside (personal) construction bots, but can be used without bots too (eg: in early game before unlocking that tech, if you have a nice early smelting setup on a previous world & wanted to use it on the new world).
When you shift-click to place an item, it creates a "ghost" copy ~ conbots will try to build these if they are in construction range ~ placing a blueprint creates ghosts of everything in that plan in one go.
This is a great time-saver, as you can double (or quadruple) your production lines with only a few clicks, & let the bots build it for you automagically. If you need to move a whole section by only a few tiles: BPs (& conbots) make it quick & easy to do.
& that is just the basic use, there are a few more advanced things that can be done with them too (circuit re-programming, for example).
There is also a deconstruction planner (red square), that you can R-click on & set filters to only remove certain things.

Few more things:
1. You have your own blueprint library where you can store your blueprints, shared along all saved games, and get them in game at any time. Blueprint books serve to organize stuff further.
2. There are things called deconstruction plans, that serve for marking objects for deletion. Construction robots will handle that, as well.
3. Both BPs and d.plans can be edited with right clicking them in your inventory - it will allow you to set up icons, names and manually remove objects for blueprints, or set your deconstruction plan to remove only certain objects - like trees for example.
4. Blueprints can be imported and exported via text string, and shared between players. https://factorioprints.com/ is a site dedicated to it.
