You can use any number of inputs or outputs to get what you want. 3 in 2 out? Use this balancer and hook up to the appropriate belts. Seems to come out balanced for me.
If I ever have to balance 8 belts, I think I'll just use 4 of these.
That is 4 too many splitters, though. You only need those middle 4 if you plan to pull a line of plates from one of them, and even then you can eliminate some.

I think the design is from the old days when belt corners were not compressed so splitters were used. That's not been the case for sometime though.
I have the same site book marked. I wish the poster would edit the 4:4 though as the newer design is more straightforward, even though its a few tiles bigger.

Yeah, I use the one without the 4 splitters in the middle. I like the look of the one with the splitters, but it's way too much. I hadn't even realized that the devs fixed curves on belts uncompressing a line, I simply didn't care and used the line curves like you posted anyway.
