i get most of the game is supposed to be crafting new stuff, but I think part of what makes Offices the best sector still by far (and labs to an extent) is unique items in the world (Antique Shotgun, Gravity Cube, Pet Rock).

I think more unique incentives for exploration besides "oh wow a new recipe/resource to work for" would help things feel a little less grindy and rewarding. A more instant gratification to clearing a new part of the sector, as opposed to more crap to haul to the base.

Thinking stuff like custom prototypes made by other scientists, more anomalous items, unique named weapons, etc.

All three items you gave examples of are found within the Labs Sector. They are also the only "one-of-a-kind" items I can think of off the top of my head.

What other unique items are there? Especially within the Office Sector.

I think they could extend that to more than just unique items and make it to have each sector have unique furniture as well to loot. When they added the new lab themed desks and cabinets to lab areas, it was nice to visit to grab some to haul back to base. I mean the concept already exists with both the train and furniture store, why not extend the same premise to other areas? If a raid destroys a couch I liked from furniture store, I’m more or less coerced to return to it to get it back.

Certainly a lot more unique furniture items than others. The red chair, the lost dog, so on.
