A double bunk would be fine. Triple would be pushing it. Currently you can't stack more than three things anyway.
Not sure about having a two person bed. I think leaving each bed being single would be fine, and avoids some connotations. If players want a 'double bed' (king or queen sized bed) maybe just put two really close to each other, assuming if the hit boxes cooperate.
I could see a Bunk bed being module, making one bed, but the bed can be stacked like most anything else, giving us up to three beds on top of each other. Bonus points if they actually snap into place!
