Just follow the numbers, pause the game and check the map at every turn.
The only one you can't do it with is in the dead end. You need to get the white car under Paradise Plaza because it's faster than the truck and tougher than the red car. However, you have to be quick and accurate.
If you wait until the mission starts to get it, there are barricades that won't let a car through, only the motorcycle, which will get you to the truck as long as you don't hit too many exploding tanks.
The bomb trucks are under Paradise Plaza, Entrance Plaza, Al Fresca Plaza, Wonderland Plaza, and North Plaza.
Note there is not a bomb truck under Food Court.
This is a lot easier to do with a crowd clearing weapon like Gems.
TIP 1: Every time you enter the Tunnels or take an elevator, Carlito's position resets.

Take the elevator back up, then go back into Paradise Plaza.
Next, go to Entrance Plaza and take the elevator down, collect the bomb, then go back up to Entrance Plaza.
Head to Al Fresca Plaza and do the same.
Cut through Food Court to Wonderland, get down, get back up again.
The grocery store is open now, since you've already done the pharmacy mission for Brad and defeated Steven. There is no elevator here. Knee Drop over the railing or Wall Kick your way down the stairs, and beat feet to the bomb truck. That's #5, so hop in the functional truck and drive to the exit ramp.
However, if you insist on fighting Carlito, you're going to need speed and timing, and running room for when he starts throwing bombs out the window.
