always remember to disable those tools if you're gonna play standard multiplayer in BO1 (TDM, FFA, S&D etc), or any VAC-protected game on steam; because multiplayer part of the game contains VAC features, and that's a risk factor for a possible ban.
EDIT: using offline mode on steam won't make any difference in your case, so it's not required to enable it to avoid getting banned. the only thing you shouldn't forget is closing the cheat apps whenever you launch multiplayer portion of the game.
library does that mean the coop zombies/campaign don't have vac protected servers?
are you sure they were banned while playing BO1 zombies? it's possible to get VAC banned in BO2 & BO3, as those two use the VAC system in all parts of the game; even campaign, solo zombies and multiplayer with bots. I've never seen/heard anybody getting banned in BO1 zombies, though.
yes, that was what I've implied in my first post. VAC protection is only for multiplayer part of BO1. you don't need to worry about a ban, when you play campaign/zombies part of BO1. that's why I suggested you to close cheat tools if you're gonna play BO1 multiplayer or any other steam game with VAC protection.

they're possibly doing some kind of file checking process for anti-cheat purpose, but I don't think such a thing exists in old CoD games like this one. it's probably true for CoDs released on battlenet (BO4, MW '19, BO:CW), but unlikely for CoDs on steam which mainly use VAC system (between and including MW2 and WW2).

I can't really share an official confirmation or a technical explanation, because it's normal that developers don't disclose such facts to the community, so the knowledge just spreads out like an unwritten rule. if you don't intend to play the game asap; you might either search the answer on internet, or ask the question on reddit, preferably on r/CODZombies.
you should check black ops 3 zombies if that's the case. BO3 zombies arguably still has the biggest community on PC, and you can find people to play with more easily. the game is relatively easier as well, compared to zombie modes of WaW/BO1/BO2. certain new features of BO3 eased the gameplay, and skill requirements for high rounds aren't steep anymore.
