also like Xhunter said in story mode they do more damage
Before he stands up like 3 seconds you attack again.
My strategy was find the attack that is the most efficent against enemy. Most of the times enemey attacks the same so at the start of the battle you have like 80-100% to have first attack.
PS. For me the hardest was Blackbeard versus Ace.

Difficult = A.I uses mechanics in a expert state to blocks and flash blocks and juggling techniques
Unbalanced = Player does 10% in full combo + A.I does basic combos w/ 40% damage in process
