The End of Zoe DLC and 21 are fairly difficult in their own respective ways.... 21 being the most ridiculously hard of all the DLC; I plan to attempt those difficult achievements after I 100% REVillage. It is possible, difficult... but possible.
Until I did, and the trick is, well, it's not difficult. It's just methodical. For most of the run you either have avoidable enemies or ones you can kill using the traps and nothing else. In a perfect run I have to shoot 4 times before the bossfight, and 3 of those are at the very end.
It's all about being patient and attentive, not so much skilled at directly fighting enemies. Treat it as a puzzle!
As for 21 - love that mode, and it's not that hard either if you count cards used by the opponent and are smart about playing yours.
End of Zoe on Joe Must Die is the only DLC I haven't beaten yet and frankly I think it's ridiculous. But I'll get there.
Essentially... just learn the styles of each round (it definitely helps if you go through the rewards system and unlock as many additional trump cards as possible, the additional trump cards will help a lot.)
edit: Just did ethan must die thank god they put those turrets in the margueritte battle life savers haha
