2. No need for a stamina bar if you can only punch Molded when they're stunned. RE6 had a stamina bar to prevent melee spamming because you could melee anytime.
3. There's nothing wrong with Chris having muscles, it's just that in RE5 they were a bit too exaggerated. But then again, it's just artistic choices to give a character some distinctive trait, Chris' muscles are no dumber or less "realistic" than Leon's haircut, or Ada's fancy dress, or Wesker wearing sunglasses at midnight.
The regular handgun can stun basic molded in 1 to 2 shots, and the machine gun puts them down in about 8-14 shots.
