RE7 is a comeback to what this franchise was about in the first place. Play the original games to undertsand that this franchise got ruined by the very Kung-Fu and QTEs that you're asking for.
You may kick and punch other people, but would you try to fight a wild bear or a pack of wolves with your bare hands? Probably not, because you know that would be stupid and would only get yourself killed.
It would be cool if there was like a chance for a molded to get stunned by a headshot and if it does Ethan socks it in the face. Or if you knock it to the ground with a shotgun you can gun bash it's face or stomp it.
It has to do with the fact that in every RE game, you're supposed to fight creatures with super-human resistance and strenght. Jack is not human, and so the Molded aren't human. That's why you're using fire arms in RE games, because you're mostly fighting against things that would laugh at your fists.
