Enemies don't die or take way too much damage
So I'm playing on normal difficulty and I need 4 headshots to kill a molded (sometimes 3, sometimes 5) and when I use the better handgun ammo, I need 4-5 headshots to incapacitate Jack while he's roaming through the mansion (while I try to get the Shotgun). But Sometimes a Molded can tank 10 shots to the head (after that I killed it with the shotgun) and Jack took 8 shots with the better handgun ammo and like 15 regular shots..... and then he killed me. Is this a bug or a mechanic I don't understand?

Just run away from Jack when you're not in an arena with him.
and the molded are tough, the amount of bullets sounds about right. some might need more than others.

It's suppose to be like that. Make your strategy and outsmart the enemy like every decent RE game asks you. You don't need to kill everything on screen.

Molded are easily killed by knife, don't even bother using ammo on the tall walking ones. Jack dies with 4 or 5 good well aimed headshots with normal 9mm ammo, just keep killing him and rushing through the first part, he takes some good 3 minutes to appear again after dying so its worth killing him if you are trying to finish a part. NEVER aim for anyones chest, chest shots suck in this game.
I noticed that he "dies" with 5 headshots, but when I played this section again today for a friend, he just didn't die. I had a similar moment with margaret, where I pumped like 15 shotgun rounds into her face and she didn't even flinch..... Or the Bossfight in the disection room, where Jack grabs himself this cutter-thingy after I shot him 4 time in the head... sometimes.... today I had to shoot him 10 time in the head. This game is pretty inconsistent when it comes to it's own rules, and so I wanted to know if this is intentional or some kind of glitch/bug/whatever, because, yeah, it would be good to know when to fight and when to flee....

where's the fun in that? You should be the one to decide when is the best time to flee, not the game. You want the game to hold your hand and say "Flee from this one!" on screen?

Every RE game to this date has variable enemy health bars. Some Ganados in RE4 dies with 1 pistol headshot, while others can take a shotgun blast to the face and still get up after that.

Are you even familiar with the classics? Nemesis in RE3? Sometimes i think too many people bash things in this game that made the classics so good.

take a headshot, wait for the reeling animation to end and when he returns back to normal take another shot. same for all the monsters in the game.

^^^^^ This,as above says, Resi's have all ways used a reset damage animation

That's why I asked if it was intentional. I don't want the game to hold my hand but I also don't want to ruin my playthrough because of some glitches (whitch this games is riddled with [enemies clipping through walls and the floor, hitboxes not working correctly a lot of times])
That's why I ask this here instead of reading some guide or walkthrough.
And no, I never had these problems in the older games. Hunters in RE1 died just fine even if I shot them again while they were in mid-animation

I'm talking about the same enemy in the same situation taking sometimes 4 bullets and sometimes..... infinite..... thought I made this pretty clear in my first post O.o

I did some debugging and found that the game in fact locks some NPCs health to 1, so the game will only let you kill them at a particular point; but it won't let you know when that point is reached.
