I can presume that she did eat the food, but didn't exactly die from it, because you know, she was infected and literally could not die, in a way. It's been showed in the "banned tapes" that the food kills you. That doesn't explain how Marguerite died though. She was infected but died somehow... Maybe that will be explained in that free update that's coming, or as Grenadeh said

The food infected you. I think it very much implies that Evelinne is in charge who stays "normal" and who becomes "Infected" as for Margueritte dying vs Jack? Longer you're infected the more powerful you become. The more it "Takes" as is evident by Zoe saying the cure won't work on someone "too far gone." Jack must have been infected first. They talk about a period of brain washing effect as Evelinne works on your mind. It's possible she infected jack first quite a bit before going on to infect the others in the house.

In the military I ate a type of canned food cald RSP, one can being from 1970s, which was comsumed in the late 90s (yes, over 20 years old). You can google image "RSP boks" to see how they looked. They are not used anymore thought.
