If you are legit spending 5 hours trying to beat her, you're definitely doing something wrong.

Instead of helping, most comments are about my comment about being an expert gamer....
You should have probably said "long time gamer" to avoid this kind of trouble...
Anyway, I guess you got your answer already. As long as you aim to her weak spot (which is not her head in this case) you should save a lot of bullets. However, as any boss she'll still require a considerable amount of ammo, but there's plenty in that place to refill your supplies after the battle.
Of course, because it is nothing to be proud of nor brag about. It is a really weird thing to say, because it sounds like you think it is an accomplishment that others strife to achieve, yet, it is rather sad to call yourself an "expert gamer". Unless you get asked from universities, media and developers about your thoughts on gaming, don't call yourself an "expert" ;)
