Again I could be wrong. I only studied some latin when working on a book / story of mine involving religions that read form latin script. English is my primary, Japanese is secondary.
These people may have not enough knowledge of the language. I mean these are some old crazy farmers living without any contact to other people and no modern technology. Maybe they didn't know better. But I'm also confused by the cross above the stairs. If these people are Satanists - like they seem to be with killing people and seasoning their flesh - why isn't the cross upside down?
These people are definitely Christian, if you look at the book next to the bloody manger it's Book of Psalms, specifically around Psalm 39. But it's all in Latin, so they definitely have an understanding of the Latin language.
EDIT: They may also be Jewish. Not familiar with which religion believes in which books.
Fun fact: The upside down cross is actually Saint Peter's Cross. If I recall correctly he felt unworthy to be crucified in the same way as Jesus so he requested it to be upside down.
Also haven't heard of any official Satanists sects that encourage sacrificing of animals/humans.
