You could try to get it on another save file, but as I understand it, that would be functionally the same as using either of the fixes I linked.
As a last resort, there is a third-party program called Steam Achievement Manager which can add/remove achievements directly. I've never used it myself, but it's supposedly safe to use in most cases. Some devs reportedly ban players who are caught using it, though I haven't personally heard of that happening in this game, and I've read that it can result in a VAC ban if used on VAC enabled games (but Stardew Valley is not VAC enabled). I've also read that it can permanently mess up achievement showcase percentages. Use it at your own discretion.
