Is there a no timer/clock mode?
This is going to sound childish because hundreds of thousands of people deal with it but I can't stand the timer. I feel rushed and anxious about it. I want to explore the farm but time runs out. I'm in the middle of something and time runs out. It feels like a battle running home before I pass out. I know I should get over it but it's not that easy. I don't know the game so while I'm figuring it out the timer messes with me. Really put me off playing this game properly because of it.

heres a mod that lets you adjust how quickly times passes that can be configured for each location if desired. https://www.nexusmods.com/stardewvalley/mods/20847

Either the timespeed mod posted above or cjb cheats menu as that also lets you pause the time or change it directly although changing it will not update the npc's correctly if you go back in time:

This game has a time limit for each day but there is no day limit - you can play for as long as you want and there's no real "fail state" no matter how long you take. So while the time limit on each day may sound daunting at first, there's no need to rush anything. Just take your time learning the game and play at your own pace.

Also, you can restart the day if things don't go well simply by returning to the title screen and reloading your save file. :kaze_hogo:

the whole game is figuring out the best way to use your time and managing your economy, and you don't need to worry about time if you are playing casually just go back to the activity the next day since there is no day limit, all managing time does early on is allow you to snowball faster.

Each day is about 14 minutes if you stay up til like 1-2am. Also I don't suggest cheating it out of the game like others said since it is an essential part of the game.
