If you don't spend Energy - time don't go by.
If you need to waste some time a little, there's an option to resume normal time flow for awhile with a key press.
might work if you set your steam deck to just turn off/go to sleep after 10 seconds depending on how those functions work exactly on the steam deck.
Though generally it's probably better to not play, when you're already nearly falling asleep.
But what if you forget to drop something into the big box, and then fall asleep in real life. In that case, you will fall asleep at 2:00 a.m., but without the sales summary providing a stop point, the game saves, and you go right into the next day. The next day will start with you in bed, and if you don't wake up in real life and do something, you'll be in a loop until you do wake up.
When you finally do wake up and do something, if you check your mail, you will find a letter from Harvey saying you fell asleep somewhere and someone brought you in. He'll charge you 1000 gold, but if you don't have the gold, he'll patch you up pro bono.
That's the best case scenario if you don't put something into the big box. Worst case scenario is you're in the mines or somewhere else dangerous and you get your ass killed. Then you loose possessions, and I think you have to pay someone, too.
So all in all, in your situation, dropping something into the big sales box is the best safeguard against falling asleep playing. You could install mods, but those are always inherently risky. You never know what other unwanted effect they will have; they can crash whenever there is an update; and there is always the chance the mod developer is going to lose interest and quit maintaining it.
He doesn't go AFK, he's playing in bed and falls asleep mid-game. XD
it's not quite what you ask for, but this will prevent days going on forever.

another non-mod solution is to make sure you put at least one thing in the shipping bin every day, as that will cause the income screen to appear at the end of the day which requires a click to close.
And as long as the mod developer continues to maintain it.
