Is there any consquenses to dating multiple characters?
I want to check out all the dialogue and events before I decide who to marry, is giving flowers/asking to date, more than one character cause any issues?

There is but a lucky rabbits foot will save you at a 10 heart event.

If the player does not have a Rabbit's Foot in inventory, all bachelorettes will express anger about the player dating them all at one time. Regardless of the player's dialogue choice(s), all bachelorettes will decide to give the player the "cold shoulder" for about a week after the event. They will give angry dialogue when interacted with, and refuse gifts. After about a week, all bachelorettes will forgive the player, and dialogues return to normal.

There are mods that let you marry multiple people so if you want you can use that and marry everyone you want for all their 14 heart events.

Alternatively to the above, You could go one by one; Pick one, date them, get their 10 heart event, marry them, get their 14 heart event, divorce, move onto the next one.

Nah, not really. That said, there are events exclusive to marriage, so you are going to miss out on some of them unless you choose to remarry.

i fully tested out the old Multiple Spouses mod and married 23 spouses over 2 years and had 21 children, a very full house with all of them living comfortably. If you want to see what happened check out my long post "RICH FARM SUCCESS'
Now I am testing out the Polyamory mod and currently am up to 3 spouses.

However, there is an even that can happen if you date all the female spouses, get them all to level 10 without proposing to any of them, and then enter Emily and Haley's house one afternoon, as mentioned above, all the women are there talking about you,.....they kind of throw you out of the house.

So if I understand correctly, I can date all of them, but I have to make sure no to date the final one without having a certain item to avoid a 'bad outcome'.

Keeping that in mind, if I propose to one person, can I continue raising from 8 to 10 stars with other characters or am I locked out of dating at that point?

yes you can continue to date others even after you marry one of them.

Jealousy can happen in vanilla game. Either way, it will always have somewhat a consequence.

If you give a gift to one of the other marriage candidates when you are already married, there is a chance that your spouse will become jealous. This only happens if the villager receiving the gift has already accepted a bouquet from you, and is the same sex as your spouse - i.e., if you married a bachelor, it only happens if you give a gift to another bachelor. It doesn't matter if the gift is liked or not, the only gift that is safe to give is a birthday gift. (Note that delivery quests do not count as gifts.) The chance that your spouse becomes jealous is between 20 and 40%, depending on daily luck. If your spouse becomes jealous, you get a 30 friendship point penalty, and the next time you speak to your spouse they will give an angry message mentioning your gift.[1]

I took this from official wiki. You can bypass with ease if you have access to some specific locations witch hut which you can use to wipe someone's memory

Basically if you are dating all the male, or female possible options, at the same time, then an event can trigger where they have a meeting. There is a separate event for each gender. Without the rabbit foot, you will take a one time hit to the relationship with the five upset people, and they will be pissed at you for about a week, then everything is back to normal. With the rabbit foot, they just have a normal discussion, and you don't suffer a loss to anything.

You can also get a divorce after getting married, and also get rid of your kids, if you have any. However to fully reset things back to normal you need to use dark magic to either mind wipe any knowledge of your being married from people's minds, and/or "dispose" of the kids you no longer want. And yes you do effectively murder your kids if you want to be rid of them. It is a very dark option, and you should indeed feel bad for being such a failure of a parent for using such evil magic for your own selfish goals.

Like I said before ,I married ALL the candidates at the same time, and never had any problems with jealousy
