I think OP is asking whether they can play a save they're client to asynchronously. The answer is yes, but I haven't tested this myself and I suspect it would result in you playing as the host's character. The saves are located in %appdata%/StardewValley/Saves.

If OP is asking whether hosted co-op games can be played offline by the host, yes, that's a native feature of the game.

you can switch back between solo and coop anytime, as long as you own the game. Your farm (or your friends farm) has to have an extra cabin for you to join their farm, but if you have a co-op farm you can always play your own farm by yourself in solo mood when your friend is not around .
