However, mod that change assets in game like Stardew Valley Expanded, is. SDV Expanded reworks whole Pelican map (every single map tile), and can lead to corrupt game file.
Otherwise, once you uninstall a mod, make sure to remove every instances of the mod you want to remove like assets and stuff, and you are fine, really.
i have a ave file that is more than a hundred hours and I wanted to add some quality of life mods not some thing crazy so yeah.

Always make a backup of your existing save file.
If it's SVE, it will crash the moment you load the save, anything that adds a new area will typically corrupt a existing save.
Quality of Life mods like Visible Fishes, Simple economy... etc. can be removed directly without problems. However, few that tweaks combat or gameplay like tools may corrupt the save.
