New Play-through Recommendations?
I'm playing the game again, and it's been quite a while. To make it extra fresh I was interested in mods. I tried using the "StardewValley VERY expanded" mod collection on nexus, but there was an element of the pack I didn't enjoy right away.

Any personal suggestions on how do go about the new play through, are mods even worth it?

Define 'a while'? If you're talking before 1.6, then there's been a lot of new stuff added. If you mean even longer, then yeah, I wouldn't recommend an insane modpack like that. Maybe just grab some of the QoL mods that make the overall experience smoother, so Better Chests, Better Crafting, UI Info Suite, Automation are all mods I'd highly recommend.

Last time I played wasn't too far off release. Those sound good, and it's more-or-less what I was leaning towards, it's just a lot more work to get all mods individually like that

Stil alot less work than the modders putted in making the mod :)

But if you haven't played 1.6 yet I would recommend to not mod heavely for now and play the game as is. Otherwise you won't know what is vanilla and what is modded.

A few Qol mods are fine ofc but can also easely trow off balance in the game.
I never play without the tractor mod, its my favorite, makes mining so much easier as you can be invisible while on the tractor. And yes mods are worth it, they really expand all aspects of the game and you can pick and choose the ones you want, It takes some time to learn to manage your mod collection, but Nexus is good in that it will tell you which ones you have installed that have updates available.
Also if you plan to spend much time in the Skull cavern there is an elevator mod which lets you carry on from where you left of the last time you were there, so you can get much further down and there is no real bottom to the place, I have been to level 1700 with the elevator and tractor mods.

Agreed, I just get lazy as hell after work.

Which mods do you personally recommend besides the elevator and tractor mods?
oh I have over 60 mods currently in my game, you will want SDV Expansion mod and Ridgeside village, and also want the CJBCheats mod and CJBItem spawner, the Automate mod and configure machines mod, Just look thru the list of most popular mods and download from Nexus on at a time, Make sure you check the requirements for each one and include each of them,
Dont do to many at the beginning , you can always add more later.
