I use... over a hundred, but the 4 most important are, in no particular order:
1) Stardew Valley Expanded - The vanilla game has always felt just too empty to me. I walk through the town, and feel like its abandoned (the in-game location, not the game itself). SVE helps with that, and adds a bunch of content besides.
2) Ridgeside Village - Same as above.
3) Convenient Inventory - Quick stack to nearby chests, my beloved.
4) Combat Controls Redux - If there is any mod that gives me a reason to never play vanilla again, it's this one. The simple change of swinging weapons and tools in the direction clicked is an incredible improvement. I don't know how people play the game without this mod. Also, it has auto swing, because I don't want carpal tunnel. I don't even use any of the mod's other features.
I use way too many mods but my must-haves are
1) Stardrop - Launcher that lets you create mod profiles for each save, so you can pick and choose without having to turn off or delete anything
2) Lookup Anything - pretty much what the name suggests
3) UI Info Suite 2 - everything from birthday and luck icons to showing NPCs on your map
4) To-Dew List - A dynamic to-do list to keep track of your plans for the day/week/season
5) Seasonal Cute Characters (available for Vanilla, SVE, and East Scarp)
6) Alternative Textures - Enables a ton of custom texture mods, from furnitures all the way to your farm animals
7) Fashion Sense - Enables mods for custom outfits, animated hairstyles, animated scarves,...
8) PIF - Personal Rooms - Lets you add doors to your farmhouse that lead to custom rooms that range from a small attic that grows with your house upgrades all the way to giant outdoor areas
9) Stardew Valley Expanded
10) East Scarp with Sword and Sorcery, and Eli&Dylan
The last few I've also added 'Yet another jump mod', 'Weather Wonders', and 'Buttons Extra Books' to my 'Always use from now' list.

I have like 20-30 mods at least count. One of the appeals to me of SDV is the mods. Anything from the elevator in Skull Cavern, to skipping the damn fishing mini game, to adding more content with RSV, etc. Different farm layouts, added furniture, decor, crops.
Half the fun of SDV is the mods.
That being said, I'd encourage a new player to at least play for a while WITHOUT mods to get a feel for the vanilla game.
Also, if you play with mods, always toss the creators a few bucks once or twice a year!
Yeah, I am hoping CA doesn't give us anything like it for Haunted Chocolatier, because I will cry. And not play it until some amazing mod creator fixes it.
I would hope a game about running a confectionary doesn't require fishing.
