there isn't any way to tell the difference, unless you specifically want the NPCs to tell you "no" when you ask for a date.
People change and develop, and their sexual preferences are too.
Some bachelors and bachelorettes start with different ones than bisexual, but that change or not depend on player's action.

you can have a look around nexus if theres something. but mods that restrict this sort of stuff tend to get banned on there.
on the other hand, if you really really want it, you can probably learn how to do it yourself in an afternoon.
It's up to you to change sexual preferences of npcs. Write your head canon or something. Nobody here will stop you.
I want to clarify some misconceptions since your topic is really odd.
Are you planning to get a rejection from some NPCs? Because the specific demand of you confuses me.
I thought about doing it myself, but I don't have much free time at the moment (I'm struggling to find time to play anything). I read that mods are created using C#, which is the language I use daily, so it wouldn't be too difficult. I'll take a look later, when time allows.
I love how CA even set it up that Leah's ex is even the same gender as the player, if you decide to pursue her as a romantic interest. I wish more games handled romantic interactions this way. Same sex is there if players want it, and it's not if they don't.
So even if there were a mod that adds such a system, I think the author/s of that mod would also strongly consider rewriting or building on the existent story arcs - which in turn might change the overall vibe of the game, for better or worse. But at least it would be optional.
I don't think the marriage candidates in this game are necessarily meant to be viewed as bisexual, but if you still have to put a label on them I think player sexual would be more correct since it essentially is about giving the player the freedom of choice when it comes to marrying whoever they want, regardless of their farmers gender.
That's literally how reality works as well. Every single person you meet in RL can be anything, until they tell you.
And there's no mod about it, because it doesn't matter. Feel free to make a mod that prevents you from gifting half the bachelors the bouquet, though i can assure you, that this will literally change nothing, if you didn't intent to gift them this very specific item to begin with. As a modder i wouldn't waste my time on such a non-problem.
