Plant a mushroom tree, OR be lucky to get randomly one, during fall (normal tree transforms somehow)
Let it "spread out" (spawn seeds around and those become new mushroom trees)
If the aforementioned seeds are too close and cannot grow, chop only the other mushroom tree(s) adjacent to it by 1x square tile, then let them grow.
From time to time, cut down a few mushroom trees, hoping you get the item; but make sure to leave the rest grow.
Rinse and repeat
P.S. Takes time and/or luck (not the in game luck, but rather, real life's)
I know the loot in the common and rare chests in the volcano region are predetermined for each day, so perhaps the same applies for the mushroom cap (though I doubt it).
Now the only thing left to grind for is the Living Hat. Too bad I already designed/decorated the land on my Ginger Island so I can't try the method of letting weeds grow on the plot and bombing them once it's all filled. I'll have to resort to farming the mines or the Green Rain event (luckily Summer is approaching soon).
