2. not ingame as far as i know. you can use an external tool like stardew checkup for it, but if this is your first time playing i strongly recommend avoiding such tools until you are well into the endgame as they contain tons of spoilers.

The Monster Eradication Goals will keep track of all the monsters you've defeated, and how many of that type you've slain so far. Monsters with stars next to them indicate their goals have been completed.
Make sure Advanced Crafting Information is enabled in the options menu.
With this setting enabled, the game will tell you how much of a particular item you have crafted when you hover over it in the crafting menu. If you don't see a number even with this setting turned on, you haven't crafted it at all yet.
2. is easy, theres an option in the menu that adds 'advanced crafting details' and adds a times crafted to things you've crafted before.
for the guild missions the ones with a check next to them mean you already have the rewards for that particular mission.
also theres a stardew valley save checker
