Test your current mod loadout with a new char. If that doesn't work, do it again but without that vintage interface mod. Also make sure to revert changes made to config files for the setup of the farmer portrait mod.
I made a new test farm and there are still no portraits, even after removing the vintage interface. I had hope it could have been this mod because I added it around that time but still nothing.
I deleted all of the farmer portrait files (I had indeed edited the config file to enable the use of the custom portrait), but because it works with Content Patcher I guess it changed the original game content, right ? Is there any place in the files I could search to see if I could put it back to place ?
I'm sorry, I am very new to modding
Ah, I guess I'll tell what SMAPI does. SMAPI is a mod "injector". It injects the mod files and loads assest or other files periodically alongside. That means the game files are left untouched, but the mod loading process has to be done everytime (it's the console you see during every play session). Content patcher only handles how "SV assets" are applied to the game. So no, SMAPI mods will never touch the game files... buuuuut something still may have happened to your vanilla files.
Try verify your game files via steam and please report back. I'm going to sleep now, but I will look back into this thread tomorrow.
How to verify game files:

I already verifyed the files via steam but there is no problem reported :/
If that doesn't help then make a backup copy of the whole "Mods" folder and put it somewhere else. Delete the whole Stardew Valley folder. Then let Steam redownload it. Install Smapi again, Open the game via smapi. Make another test char and see if the townies have portraits. Close the game if they do. Put your Mods from your backup folder back in where they belong. Then test it again.
Sorry if this sucks so much. I ahven't encountered anyone having this problem. But we need to find out what is the cause. Not playing with townies portraits is just no fun.
-Portrait images (fall, spring, summer, winter aindoor and winter outdoor)
-Sprites images (same names + "abigail nose")
Should I delete the seasonal outfits mod to check if there are still png images when searching "abigail", and if there is, should I delete them ?
Here is a screenshot of my search : https://imgur.com/a/qyaPU0t
And for the second solution you are proposing, would the action of deleting the Stardew Valley folder make me lose my save ? I'm not very familiar with Steam as I mostly play on swtich and PS5.
Anyway thank you so much for being so invested in my problem ! I am marrying Sophia soon and it would suck to do it without seeing her face :')
C:\Users\<username>\%AppData%\Roaming\Stardew Valley\Saves
If you're really worried about your save data, you can copy the entire folder and paste it somewhere else on your computer as a backup. Your save data is stored in a completely different location from your game installation, so deleting the game folder or uninstalling should not delete your saves.
Also, the AppData folder is hidden by default, so you will need to make sure the Show Hidden Items option is checked.
Yes, please. You can still unpack the seasonal outfit after your search again.
No problem.
99,9% of modern games (2007+) save their user option file and their save files in a different location precisely to avoid this problem if something needs to be reinstalled. Some games even use Steam's internal file system for games so those files are seperate too. SVD's files are saved under appdata. The folder is normally hidden so that a user who isn't particular PC savvy may not delete it, because they don't know what it is. You can make it visible via windows options so that it will be easier finding all your files of your games or you use the search field to naviagte to appdata.

So no, deleting your game folder is super save. Please delete your game folder manually after you did a backup of Mods. Let Steam verify your game files. It will notice all the files being missing then it will download them. Install Smapi, make a test character to see if townies have their protrait. Copy back your mods from your backup in the mod folder. Then see what it does to your portraits. Report your findings so that we can continue working on this error. Also... no pressure from me. You do this when you have time. I get notified if someone posts in this Steam discussion.
Sidenote:
If you ever run into similar troubles or want to make a copy of your saves to transfer it somewhere else, yadda yadda then the SVE wiki is excellent for helping you. People who help with the wiki are very dedicatet and often modders who know the ins and out of the game.

A really small portion of indie games save their files in their game folders. Most of these developers use an easy to use engines and haven't instructed their game project to save somewhere else.

I guess it's from Stardew Valley Expanded, I shouldn't delete it right ?
No other png file so we're good. I'm going to backup my mod file and delete the SV file as you said and keep you updated !
In my despair I searched online if there existed and option to desactivate the portraits... thinking maybe I might have changed it by mistake... Well I actually did !!! It's like in the first easiest accessible options of the game and I didn't even know it existed !!! All I had to do is tick that case again and the portraits came back...
I really thank you both for wasting your time on my idiot problem which wasn't really one...
