Probably the best solution is low-tech like reading glasses that magnify things a couple of times, or just moving physically closer to the TV. Maybe consider those Japanese-style chairs that sit directly on the ground instead of on legs. You can also try reducing the resolution of the game. So, if you have say a 4K TV, try dropping Stardew down to 1080p and see if that helps.

I use it mostly to zoom out just a little bit more than normal to pretend to be not short-sighted for once in my life, but you can also use it for adjusting UI scale.
