unfortunately i think the higher fishing level is what works against us. you may consider a mod that lets you catch seaweed in crab pots or something to that effect if you're finding it tiresome.

absolutely.
some grind in stardew is good for spice, but if its a balancing issue from the over-enthusiastic fishing process which i live for, well, then thats not good (like how mariner perk removes the trash gathering - the trash is a beautiful passive source of quartz, stone, wood and coal lmao)
grateful for smapi so one can make their experience the relaxing place it needs to be.
