True Sandbox?
I mean no need for story or npc standards and you can just chill wit da plants and day/night cycles? I don't even mind "tired/sleep" that much, IN other words I don't want to stress most if not all time events in this hopefully optional game mode. In other words a mode where the game doesn't grade you for not working according to its highest mechanical standard.

You don't HAVE to complete any quests, interact with other NPCs aside from buying seeds, or anything else. You can even get mods that let you shop from your farm. If you just want to focus on your farm and only your farm, you can. The only thing the game will do is force you to sleep at 2am every day. This is because that's when the game does a lot of behind the scenes stuff, like save your progress.

I suppose you may get the "angry" grandpa cutscene at the start of year 3, but it doesn't really impact anything. You can just keep right on going after it's done.

I mean that's cool and all but I would only recommend that they have a totally "no-story impact" mode that you would have to select yourself and not obviously be the default.

That already exists. As I already said, you don't HAVE to complete any of the quests in the game. You can be an anti-social farmer who prefers the company of their crops to that of other people and it has zero impact on the game save which of three cutscenes you get on a single day in the game. You can even skip through that scene if you want.

Does that include all the mining upgrade stuff as well? I want to be able to mine as well and upgrade without investing in the story as the mainstay for that. Basically no potential upgrade from the story should be off limits in my proposed mode. And to cite one example I think you have to cater to the explorer's guild during their hours OP in order to get some of those upgrades. I mean if that never expires then that's fine too. I'm just trying to understand how this game is structured is all...

The most important thing is that you don't need to pursue any one particular story to unlock any one particular ability.

There are no quests involved with upgrading your tools. There's only one NPC you deal with to upgrade tools, Clint the blacksmith. You bring him the tool, 5 bars of whatever you are upgrading to (copper, iron, gold, iridium), and the appropriate amount of gold to pay for it.

EDIT: After some additional thought, there is a limit you will hit if you don't do some quests. That limit is gold tools. You won't find enough iridium in the Mines to upgrade your tools. I've only ever found a few iridium ores in the mines. I've found more from treasure chests fishing than in the mines.

There's no real hard timer that should be stressing you out in this game. I used to be like you and stress about getting things done, but I realize that was only because of the overwhelming amount of activities that could be done. You won't get punished for not doing things, or doing things at your own pace. Chances are you will already be able to complete everything by year 2 if you decided you wanted to complete the Grandpa story line stuff in the future. I wasn't even trying to and I ended up completing it in about a year and a half in my first "full" playthrough. the stress is in your head, the game itself shouldn't be doing anything to stress you. I know someone mentioned an angry Grandpa. I never got that scene, but I happen to enjoy the story stuff since it adds to the fun of the game for me. I would highly doubt you get punished for anything though. That's not the type of game this is.

I wouldn't recommend a game rated as low as that.

you could probably commission a mod to do this

if you look around on nexus it's not hard to find SDV modders that will make specific mods for you if you pay them
